If you’ve ever tried making smoothies, you know it’s pretty easy to throw a bunch of different fruits and some yogurt into a blender and turn out something delicious (albeit it very sweet!). The same strategy doesn’t work so well with vegetables. Believe me – I’ve tried! Fortunately, I came across a recipe for a broccoli-based smoothie that tasted surprisingly good. It’s a bit on the savory side, but very pleasant. It’s an easy way to get a couple of servings of fruits and vegetables, and a great source of potassium and vitamin K!
Recipe
The serving size is 1 or 2, depending on person – but the nutritional info is based on the entire recipe.
1.5 c. unsweetened coconut milk*
Handful of broccoli (fresh or frozen) – approx 3/4 cup
1 Frozen banana (fresh works too, but frozen makes the smoothie much colder)
1 T. Honey
1 t. Cinnamon
*you can substitute any other non-dairy milk
